Bo, her family and the Chao Phraya

Before this soup reached our Paris table, its story unfolded on the water. Bo and her family sold guay teow from a boat on the Chao Phraya. That connection to Ayutthaya gives the dish a special place at Thai Yim 2.

We want to share this part of our story through familiar food: noodles, a full-flavoured broth and the pleasure of gathering around a bowl.

Ayutthaya and the boat noodle tradition

Guay teow reua, or boat noodles, are closely associated with Ayutthaya and trade along its waterways. Vendors prepared and served noodles from their boats. The small bowls of that tradition are still found in shops on land today.

Guay teow nam tok belongs to this world of rich noodle soups. You may also see it written as kuay tiew nam tok: different spellings of the same Thai name, ก๋วยเตี๋ยวน้ำตก.
